Ingredients
Gather these ingredients, and you’re on your way to creating a delicious meal:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 ounces egg noodles
- 4 tablespoons unsalted butter
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/2 cup chicken broth (for extra flavor, or water as a substitute)
Feel free to add a splash of lemon juice or a pinch of red pepper flakes for an extra kick, just like I do when I want to bring a bit of zest to the dish.
Instructions
- Start by seasoning the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, until fully cooked and golden brown. Remove the chicken and let it rest before slicing.
- In a large pot, bring salted water to a boil and cook the egg noodles according to the package instructions. Once cooked, drain and set aside.
- In the same pot, melt the butter over low heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the cooked noodles, Parmesan cheese, and chicken broth, mixing until the noodles are well coated and the cheese is melted.
- Slice the cooked chicken and add it to the noodles. Toss to combine.
- Finish by sprinkling chopped parsley over the top before serving.
Cooking with intuition, as I learned from my grandmother, often yields the best results, so feel free to adjust the flavors to your liking.
