- 1 pound of flank steak, thinly sliced against the grain
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 2 medium onions, sliced
- 3 cloves of garlic, minced
- 1 tablespoon of freshly grated ginger
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- Salt and pepper to taste

Instructions
- In a large bowl, combine the sliced flank steak with soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for about 15 minutes. This step not only adds flavor but also tenderizes the meat — a tip I picked up from my abuela who always marinated her meats to perfection.
- Heat a tablespoon of vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated beef in a single layer. Cook for 2-3 minutes on each side until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced onions and sauté for about 4 minutes until they begin to soften. The aroma at this stage always reminds me of those lively family dinners back in Asheville.
- Add minced garlic and grated ginger to the onions, cooking for another 1-2 minutes until fragrant. Stir in the sesame oil and rice vinegar, scraping up any browned bits from the bottom of the skillet.
- Return the cooked beef to the skillet, tossing everything together to ensure the beef is well coated with the flavorful onion mixture. Season with salt, pepper, and red pepper flakes if using.
- Let the stir fry cook for an additional 2 minutes to allow all the flavors to meld together. Serve hot, and enjoy the symphony of flavors with each bite.
