Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges for serving

Instructions

  1. Start by marinating the chicken. In a bowl, combine olive oil, smoked paprika, garlic powder, ground cumin, salt, and pepper. Coat the chicken breasts thoroughly and let them marinate for at least 30 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Once hot, grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Let it rest for a few minutes before slicing.
  3. While the chicken is grilling, prepare the filling. In a large bowl, mix together the cooked rice, black beans, corn, shredded cheddar cheese, and chopped cilantro.
  4. Warm the flour tortillas in a dry skillet over medium heat for about 20 seconds on each side to make them pliable.
  5. To assemble the burrito, lay a tortilla flat and spread a tablespoon of chipotle ranch dressing in the center. Add a portion of the rice mixture, followed by slices of grilled chicken.
  6. Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up. Repeat with the remaining tortillas and filling.
  7. For a crispier texture, place the assembled burritos back on the grill or skillet for a minute on each side until golden brown.
