Ingredients

  • 1 pre-made chocolate cookie pie crust
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar
  • 2 cups fresh cherries, pitted and halved
  • 1/4 cup cherry preserves
  • 1 tablespoon cornstarch
  • 1/2 cup cold water
  • 1 1/2 cups whipped cream for topping
  • Chocolate shavings, for garnish (optional)

Instructions

  1. Start by preparing the chocolate ganache. In a small saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a heat-proof bowl. Let it sit for 2 minutes, then stir until smooth and glossy.
  2. Pour the chocolate ganache into the pre-made chocolate cookie crust, spreading it evenly with a spatula. Place in the refrigerator to set for about 30 minutes.
  3. While the ganache sets, prepare the cherry topping. In a medium saucepan, combine the cherries, cherry preserves, and granulated sugar. Cook over medium heat, stirring occasionally, until the cherries start to release their juices, about 5 minutes.
  4. In a small bowl, mix the cornstarch with cold water until smooth, then add to the cherry mixture. Continue to cook while stirring until the mixture thickens, about 2-3 minutes. Remove from heat and let it cool to room temperature.
  5. Once the chocolate layer has set, spread the cooled cherry mixture over the top. Refrigerate the pie to allow the flavors to meld together, at least 1 hour or overnight for best results.
  6. Before serving, top the pie with whipped cream and garnish with chocolate shavings if desired.
