- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper.
- Season the cod fillets with salt and pepper. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic and ginger to the skillet. Cook for an additional 1-2 minutes, until fragrant.
- Stir in the curry powder, cumin, and turmeric. Let the spices toast for about 30 seconds to release their aromas.
