Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk (whole or 2%)
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- 1/3 cup brown sugar
- 1/4 cup chopped pecans (optional, but recommended for crunch)
- For the glaze:
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1/2 teaspoon vanilla extract
If you’re out of milk, feel free to substitute with almond milk or any other milk alternative you have on hand. The pecans add a wonderful texture, but you can leave them out or replace them with walnuts if preferred.
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease with non-stick spray.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix, as this can make the muffins tough.
- In a small bowl, mix together the cinnamon and brown sugar. Gently fold this mixture into the muffin batter, creating a marbled effect.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. If using, sprinkle chopped pecans on top.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. The muffins should be golden brown and have a lovely aroma.
- While the muffins are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
- Once the muffins have cooled slightly, drizzle the glaze over the top, letting it soak into the warm muffins. Serve immediately for the best experience.
