Learn how to make delicious Cinnamon Sugar French Toast Muffins. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with butter.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the muffins dense.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  6. In a small bowl, mix the brown sugar and additional teaspoon of cinnamon. Sprinkle this mixture generously over the top of each muffin.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. While the muffins are still warm, brush the tops with melted butter. This adds an extra layer of flavor and helps the cinnamon sugar topping adhere.
  9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
