- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon (for topping)
- 2 tablespoons melted butter (for topping)
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with butter.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
- In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the muffins dense.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- In a small bowl, mix the brown sugar and additional teaspoon of cinnamon. Sprinkle this mixture generously over the top of each muffin.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- While the muffins are still warm, brush the tops with melted butter. This adds an extra layer of flavor and helps the cinnamon sugar topping adhere.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
