Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1 additional teaspoon ground cinnamon for coating

Feel free to substitute the vanilla extract with almond extract for a nutty twist. For a gluten-free version, you can use almond flour in place of all-purpose flour.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3 minutes.
  3. Add in the vanilla extract, mixing until fully incorporated.
  4. Gradually add the all-purpose flour and salt, mixing until the dough comes together. It’s okay if the dough seems a bit crumbly; it should hold together when pressed.
  5. In a small bowl, mix the granulated sugar and the additional teaspoon of ground cinnamon to create the coating.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving about 1 inch apart.
  7. Bake in the preheated oven for 10-12 minutes or until the bottoms are just beginning to brown.
  8. Remove from the oven and allow the cookies to cool for about 5 minutes before rolling them in the cinnamon sugar mixture.
  9. Once coated, transfer the cookies to a wire rack to cool completely.
