Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1 additional teaspoon ground cinnamon for coating
Feel free to substitute the vanilla extract with almond extract for a nutty twist. For a gluten-free version, you can use almond flour in place of all-purpose flour.
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 3 minutes.
- Add in the vanilla extract, mixing until fully incorporated.
- Gradually add the all-purpose flour and salt, mixing until the dough comes together. It’s okay if the dough seems a bit crumbly; it should hold together when pressed.
- In a small bowl, mix the granulated sugar and the additional teaspoon of ground cinnamon to create the coating.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving about 1 inch apart.
- Bake in the preheated oven for 10-12 minutes or until the bottoms are just beginning to brown.
- Remove from the oven and allow the cookies to cool for about 5 minutes before rolling them in the cinnamon sugar mixture.
- Once coated, transfer the cookies to a wire rack to cool completely.
