Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1/2 cup unsalted butter, melted

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/4 cup milk
  • 1/3 cup packed brown sugar
  • 1 tablespoon ground cinnamon

Feel free to substitute whole wheat flour if you want to add a bit of fiber or use coconut sugar as an alternative to granulated sugar for a deeper flavor.

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, mix the melted butter and granulated sugar until well combined. Stir in the eggs and vanilla extract until smooth.
  4. Add the mashed bananas and milk to the wet ingredients and mix until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bread tender.
  6. In a small bowl, combine the brown sugar and cinnamon. This will be your delightful swirl.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter on top and sprinkle with the rest of the cinnamon sugar mixture. Use a knife to gently swirl the cinnamon sugar into the batter, creating a marbled effect.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
