Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground lamb (or beef for a classic twist)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 cup frozen peas and carrots
  • 2 pounds potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onions are translucent, about 5 minutes.
  3. Increase the heat to medium-high and add the ground lamb. Cook until browned, breaking it up with a spoon, about 8 minutes. Season with salt and pepper.
  4. Stir in the tomato paste and Worcestershire sauce, cooking for an additional 2 minutes to deepen the flavors.
  5. Add the beef broth and bring the mixture to a simmer. Stir in the peas and carrots, then reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld.
  6. Meanwhile, boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return them to the pot.
  7. Add the butter, milk, and Parmesan cheese to the potatoes, mashing until smooth and creamy. My abuela always said the secret to perfect mashed potatoes is a little extra love — and maybe a touch more butter!
  8. Transfer the lamb mixture to a baking dish, spreading it out evenly. Top with the mashed potatoes, spreading them to cover the meat entirely. Use a fork to create peaks in the potatoes for extra texture.
  9. Bake in the preheated oven until the potatoes are golden brown and the pie is bubbling at the edges, about 20-25 minutes.
  10. Garnish with chopped parsley before serving, if desired.
