Ingredients
- 2 cups all-purpose flour
- 1 cup cottage cheese
- 1/4 cup olive oil
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: fresh herbs (like rosemary or thyme), garlic powder, or sesame seeds
I encourage you to play around with the toppings! Much like my grandmother, who never shied away from adding a pinch of this or a sprinkle of that, you can make this flatbread uniquely yours. And if you’re out of cottage cheese, ricotta or Greek yogurt can be your allies in the kitchen.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, baking powder, salt, and pepper. Stir in the cottage cheese and olive oil until a dough forms.
- Transfer the dough to a floured surface and knead for about 5 minutes, or until smooth and elastic. This is where you can infuse the dough with your energy and love, just like how my grandmother would say it infuses the food with good vibes.
- Roll out the dough into a rectangle, about 1/4 inch thick. Place it on the prepared baking sheet.
- Brush the top with a little olive oil and sprinkle on your choice of toppings. I often opt for rosemary and garlic powder, reminiscent of the fresh herbs we’d pick from my grandmother’s garden.
- Bake for 15-18 minutes, or until the edges are golden brown and the center is cooked through.
- Let it cool slightly before slicing and serving. Enjoy the warm, comforting aroma that fills your kitchen!
