Ingredients

  • 12 oz linguine
  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes (adjust for spice preference)
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Parmesan cheese, grated, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook until fragrant, about 1 minute.
  4. Stir in the Dijon mustard, smoked paprika, and red pepper flakes, cooking for another minute to blend the flavors.
  5. Pour in the chicken broth and lemon juice, stirring to combine. Let the sauce simmer for 2-3 minutes, allowing it to thicken slightly.
  6. Add the cooked chicken back into the skillet, tossing to coat in the sauce. Then, add the drained linguine and chopped parsley, tossing everything together until the pasta is well coated.
  7. Serve hot, garnished with grated Parmesan cheese for an extra touch of richness.
