Ingredients
Gather up these simple ingredients, and you’ll be well on your way to creating these delightful cookies:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 1/4 cup cornstarch
- 1/3 cup sugar (for custard filling)
- 3 large egg yolks
- 1 teaspoon vanilla extract (for custard filling)
- 1/2 cup heavy cream
- 1/4 cup semi-sweet chocolate chips
Feel free to substitute whole milk with almond milk for a dairy-free option, and if you’re out of semi-sweet chocolate chips, dark chocolate works beautifully as well.
Instructions
Ready to start baking? Follow these simple steps:
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
- Using a hand mixer, cream the softened butter until fluffy, then add the egg and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll the dough into small balls, place them on the baking sheet, and flatten slightly with your palm.
- Bake for 10-12 minutes or until the edges are lightly golden. Let them cool completely on a wire rack.
- For the custard, whisk together milk, cornstarch, and sugar in a saucepan over medium heat. Stir constantly until it thickens.
- Remove from heat, and slowly whisk in egg yolks and vanilla extract. Return to heat, stirring, until just bubbling.
- Once thickened, remove from heat and let it cool. Refrigerate for about an hour.
- For the ganache, heat the heavy cream in a small saucepan until just simmering. Pour over chocolate chips in a bowl, letting it sit for a minute before stirring until smooth.
- Assemble your cookies by spreading a spoonful of custard onto each cookie, then drizzle with chocolate ganache. Let them set before serving.
Baking is where my creative side truly comes alive, reminding me of the carefree afternoons spent with my grandma, where we’d bake until the kitchen smelled of sweet success.
