- Begin by seasoning the chicken pieces with Cajun seasoning, ensuring each piece is well coated.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the red and yellow bell peppers until they start to soften, about 3 minutes.
