Learn how to make delicious Creamy Cajun Chicken Soup. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Gather these ingredients for a soup that’s as easy to make as it is delicious:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon Cajun seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 stalks celery, chopped
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for extra spice)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen corn
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.
  2. In the same pot, add the chopped onion, garlic, bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes. This step always reminds me of my abuela’s kitchen, where the aroma of sautéing onions signaled that something delicious was on the way.
  3. Add the smoked paprika and cayenne pepper, stirring to coat the vegetables in the spices.
  4. Pour in the chicken broth and return the cooked chicken to the pot. Bring to a simmer and let it cook for 15 minutes, allowing the flavors to meld together beautifully.
  5. Reduce the heat to low and stir in the heavy cream and frozen corn. Simmer for an additional 5 minutes, until the soup is heated through and creamy.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
