- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon Cajun seasoning
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 stalks celery, chopped
- 1 teaspoon smoked paprika

- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen corn

Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.
- In the same pot, add the chopped onion, garlic, bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes. This step always reminds me of my abuela’s kitchen, where the aroma of sautéing onions signaled that something delicious was on the way.
- Add the smoked paprika and cayenne pepper, stirring to coat the vegetables in the spices.

- Reduce the heat to low and stir in the heavy cream and frozen corn. Simmer for an additional 5 minutes, until the soup is heated through and creamy.
