Ingredients

  • 12 oz pappardelle pasta
  • 1 lb beef sausage, removed from casing
  • 1 tablespoon olive oil
  • 1 bulb fennel, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons Calabrian chili paste
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

If you can’t find pappardelle, feel free to substitute with fettuccine or tagliatelle. For a lighter version, you can use turkey sausage instead of beef sausage.

Instructions

  1. Bring a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the beef sausage and cook, breaking up with a spoon, until browned and cooked through, about 8 minutes.
  3. Add the sliced fennel and minced garlic to the skillet. Sauté for 3-4 minutes until the fennel becomes tender and the garlic is fragrant.
  4. Stir in the Calabrian chili paste, adjusting to your preferred spice level. Cook for another 2 minutes, allowing the flavors to meld.
  5. Reduce the heat to low and pour in the heavy cream. Stir in the Parmesan cheese until melted and smooth. Add the reserved pasta water gradually until you reach your desired sauce consistency.
  6. Toss the cooked pappardelle in the skillet, coating it evenly with the creamy sauce. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh chopped parsley. Serve immediately and enjoy!
