Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 16 ounces potato gnocchi
  • 1/2 cup cooked crispy bacon, crumbled
  • 2 cups fresh spinach leaves
  • Chopped fresh parsley, for garnish (optional)

If you’re out of gnocchi, try substituting with pasta or even rice for a unique twist. For a vegetarian version, you can swap chicken with your favorite mushrooms or tofu.

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  3. Reduce the heat to medium and stir in the cream cheese until smooth and creamy. Add the cheddar and Parmesan cheeses, stirring until melted and well combined.
  4. Return the chicken to the skillet along with the gnocchi. Stir to coat everything in the creamy sauce. Cover and cook for 5-7 minutes, until the gnocchi is tender.
  5. Fold in the crispy bacon and fresh spinach, allowing the spinach to wilt slightly. Taste and adjust seasoning as needed.
  6. Garnish with freshly chopped parsley before serving. Enjoy the warm, comforting flavors with loved ones.
