Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup chicken broth
- 8 ounces cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 16 ounces potato gnocchi
- 1/2 cup cooked crispy bacon, crumbled
- 2 cups fresh spinach leaves
- Chopped fresh parsley, for garnish (optional)
If you’re out of gnocchi, try substituting with pasta or even rice for a unique twist. For a vegetarian version, you can swap chicken with your favorite mushrooms or tofu.
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce the heat to medium and stir in the cream cheese until smooth and creamy. Add the cheddar and Parmesan cheeses, stirring until melted and well combined.
- Return the chicken to the skillet along with the gnocchi. Stir to coat everything in the creamy sauce. Cover and cook for 5-7 minutes, until the gnocchi is tender.
- Fold in the crispy bacon and fresh spinach, allowing the spinach to wilt slightly. Taste and adjust seasoning as needed.
- Garnish with freshly chopped parsley before serving. Enjoy the warm, comforting flavors with loved ones.
