Ingredients
2 pounds of russet potatoes, peeled and quartered
4 cloves of garlic, peeled
1/2 cup of unsalted butter
3/4 cup of heavy cream (or substitute with whole milk for a lighter version)
Salt to taste
Freshly ground black pepper to taste
Optional: Chopped fresh chives for garnish
Instructions
Start by placing the potatoes and garlic cloves in a large pot, then cover them with cold water. Add a generous pinch of salt to the water.
Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are fork-tender, about 15-20 minutes.
While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the heavy cream and heat until warm. Be careful not to let it boil.
Once the potatoes are done, drain them well and return them to the pot.
Using a potato masher, begin mashing the potatoes and garlic together. Slowly pour in the butter and cream mixture, continuing to mash until smooth and creamy.
