Ingredients
4 boneless, skinless chicken breasts
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons olive oil
2 tablespoons butter
Juice of 2 lemons
Zest of 1 lemon
3 cloves garlic, minced
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Begin by seasoning the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Transfer to a plate and set aside.
In the same skillet, reduce the heat to medium and add the butter. Stir in the minced garlic and cook for about 1 minute until fragrant.
Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let it simmer for 2-3 minutes.
