Ingredients
Gather these simple ingredients to create your own version of this comforting dish, and feel free to make substitutions as needed:
- 2 pounds pork tenderloin, trimmed
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh thyme leaves, chopped
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- Optional: 1/4 cup white wine for deglazing
The beauty of cooking is the freedom to adapt. If you’re out of thyme, try rosemary or sage. No heavy cream? A mix of milk and a bit of cornstarch can do the trick in a pinch. Make it your own!
Instructions
- Preheat your oven to 375°F (190°C). Season the pork tenderloin with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the tenderloin on all sides until golden brown, about 8-10 minutes.
- Remove the pork from the skillet and set it aside. Lower the heat to medium, add the butter, and sauté the minced garlic until fragrant, about 1 minute.
- Deglaze the pan with the optional white wine, scraping up the brown bits for added flavor. Let it simmer for 2 minutes to reduce slightly.
- Stir in the chicken broth, heavy cream, Dijon mustard, and thyme. Bring to a gentle simmer, stirring occasionally.
- Return the pork tenderloin to the skillet. Spoon some of the sauce over the top.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Remove the skillet from the oven and place the pork on a cutting board. Let it rest for 5 minutes before slicing.
- Whisk the Parmesan cheese into the sauce until smooth. Adjust seasoning with salt and pepper to taste.
- Slice the pork and serve with the creamy sauce drizzled over the top.
Cooking is like storytelling; each step builds on the last to create something memorable. Don’t rush it — let the flavors develop for a richer experience.
