Ingredients

  • 1 1/2 cups uncooked long-grain white rice
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 pound flank steak, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped cilantro (optional, for garnish)

Instructions

  1. Start by rinsing the rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice fluffy.
  2. In a large pot, combine the rice, beef broth, and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  4. While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the sliced steak strips.
  5. Season the steak with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 5-7 minutes, or until the steak is browned and cooked to your liking. Remove from heat and set aside.
  6. Once the rice is ready, stir in the shredded Monterey Jack cheese and heavy cream. Mix until the cheese is melted and the rice is creamy.
  7. Serve the creamy queso rice with the cooked steak strips on top. Garnish with chopped cilantro if desired.
