Ingredients
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon vinegar
- Salt and pepper, to taste
- Red food coloring
- Black olives, sliced
- Green food coloring (optional for added effect)
If you don’t have Dijon mustard, feel free to substitute with yellow mustard for a milder flavor. You can also use Greek yogurt in place of mayonnaise for a lighter version.
Instructions
- Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove from heat, cover, and let the eggs sit for 10 minutes.
- Transfer the eggs to an ice bath to cool for 5 minutes, making them easier to peel.
- Gently crack the eggshells all over with the back of a spoon, but do not peel them. This will create a “vein” effect when dyed.
- Add red food coloring to a bowl of water. Submerge the cracked eggs and let them sit for at least 30 minutes to absorb the color.
- Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl.
- Mix the egg yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth. Adjust seasoning to taste.
- Add a drop of green food coloring to the yolk mixture if desired, for an extra creepy effect.
- Spoon or pipe the yolk mixture back into the egg whites.
- Top each egg with a slice of black olive to resemble an eyeball, and watch your guests’ eyes widen with delight!
