Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon vinegar
  • Salt and pepper, to taste
  • Red food coloring
  • Black olives, sliced
  • Green food coloring (optional for added effect)

If you don’t have Dijon mustard, feel free to substitute with yellow mustard for a milder flavor. You can also use Greek yogurt in place of mayonnaise for a lighter version.

Instructions

  1. Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove from heat, cover, and let the eggs sit for 10 minutes.
  2. Transfer the eggs to an ice bath to cool for 5 minutes, making them easier to peel.
  3. Gently crack the eggshells all over with the back of a spoon, but do not peel them. This will create a “vein” effect when dyed.
  4. Add red food coloring to a bowl of water. Submerge the cracked eggs and let them sit for at least 30 minutes to absorb the color.
  5. Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl.
  6. Mix the egg yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth. Adjust seasoning to taste.
  7. Add a drop of green food coloring to the yolk mixture if desired, for an extra creepy effect.
  8. Spoon or pipe the yolk mixture back into the egg whites.
  9. Top each egg with a slice of black olive to resemble an eyeball, and watch your guests’ eyes widen with delight!
