  • 8 corn tortillas

Instructions

  1. Begin by preparing the chicken. Cut the chicken thighs into bite-sized strips and place them in a bowl with the buttermilk. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator.
  2. In a shallow dish, mix together the flour, paprika, garlic powder, salt, and black pepper.
  3. Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom by 1/4 inch.
  4. Remove the chicken from the buttermilk, letting the excess drip off, and dredge each piece in the flour mixture, ensuring it’s fully coated.
  5. Fry the chicken in batches, about 4-5 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
