Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 3 tablespoons butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Boil the cubed potatoes in salted water until tender, approximately 15-20 minutes. Drain and return them to the pot.
  2. Add the butter and milk to the potatoes, mashing them until smooth. Season with salt and pepper. Let them cool.
  3. In a skillet over medium heat, cook the ground beef until browned. Add the chopped onion and garlic, cooking until the onion is translucent.
  4. Stir in the cumin and paprika, cooking for an additional 2 minutes. Remove from heat and mix in the shredded cheddar cheese and cilantro, if using.
  5. Preheat a large skillet with about an inch of vegetable oil over medium-high heat.
  6. Take a scoop of mashed potato and form it into a ball. Make a well in the center and fill it with the beef mixture, then seal it by shaping the potato around the filling.
  7. Dip each ball into the beaten egg, then roll in breadcrumbs to coat completely.
  8. Fry the potato balls in the hot oil, turning occasionally, until they are golden brown and crispy, about 3-4 minutes per side.
  9. Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
