Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly oil it.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch. This ensures even cooking.
  3. Set up a breading station with three shallow dishes. In the first, combine the flour with a pinch of salt and pepper. In the second, beat the eggs. In the third, mix the breadcrumbs, Parmesan cheese, and garlic powder.
  4. Dip each chicken breast in the flour, then the eggs, and finally coat it generously with the breadcrumb mixture, pressing to adhere.
  5. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the chicken and cook until golden brown, about 3-4 minutes per side. Transfer to the prepared baking sheet.
  6. Bake the chicken in the preheated oven for 15-20 minutes, or until cooked through and juices run clear.
  7. While the chicken bakes, prepare the sauce. In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 1 minute.
