Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. In another dish, beat the eggs until smooth.
  4. Dip each chicken breast into the eggs, allowing any excess to drip off, then coat thoroughly in the Parmesan mixture, pressing gently to adhere.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until golden brown on each side, about 4 minutes per side. Remove chicken from the skillet and set aside.
  6. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  7. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and bring to a simmer.
  8. Return the chicken to the skillet, spooning some of the sauce over the top. Transfer the skillet to the oven and bake for 10-15 minutes, or until the chicken is cooked through and the sauce is bubbling.
  9. Garnish with chopped parsley before serving.
