Ingredients

  • 1 pound ground beef (80% lean)
  • 4 slices of bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 4 burger buns
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 4 slices of cheddar cheese
  • 1 small red onion, thinly sliced
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • Pickles, optional

Instructions

  1. Start by cooking the bacon over medium heat until crispy. Once done, remove and place on a paper towel-lined plate to drain, and crumble once cooled. Reserve 1 tablespoon of the bacon fat.
  2. In a small bowl, mix the mayonnaise, Dijon mustard, and crumbled bacon. This bacon mayo will be the star of your burger!
  3. Divide the ground beef into four equal portions and gently form into balls, taking care not to overhandle the meat.
  4. Heat a cast-iron skillet over high heat until it begins to smoke. Add the reserved bacon fat, then place the beef balls onto the skillet, one at a time, and smash them down with a sturdy spatula until they’re about 1/2 inch thick.
  5. Season the patties with salt and pepper, and let them cook for 2-3 minutes until the edges are crispy and dark brown. Flip the patties, add a slice of cheddar cheese on top, and cook for another 1-2 minutes until the cheese melts.
  6. While the patties are cooking, butter the buns and toast them in a separate pan until golden brown.
  7. To assemble, spread a generous amount of bacon mayo on each bun, layer with the crispy patty, lettuce, tomato, red onion, and pickles if using. Top it with the other half of the bun and serve immediately.
