Ingredients
- 1 pound beef sirloin, thinly sliced
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 ounces mushrooms, sliced (button or cremini work well)
- 1 cup coconut milk
- 1/4 cup peanut butter (creamy or chunky)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 1 tablespoon lime juice
Feel free to substitute the beef with chicken or tofu for a vegetarian option. You can also use almond butter if you prefer a different nut flavor. Remember, cooking is an art, not a science — adapt to your taste!
Instructions
- In a large bowl, toss the beef slices with curry powder, salt, and pepper. Let it marinate for at least 15 minutes to allow the flavors to meld.
- Heat olive oil and butter in a large skillet over medium-high heat. Add the beef and cook until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add mushrooms and sauté until they’re golden and have released their moisture, about 5 minutes.
- Reduce the heat to medium and add coconut milk, peanut butter, soy sauce, lime juice, ginger, and garlic to the skillet. Stir until the peanut butter is fully incorporated, creating a smooth sauce.
- Return the beef to the skillet and simmer everything together for an additional 5 minutes, allowing the sauce to thicken slightly.
- Meanwhile, prepare the mango salsa by combining diced mango, red onion, cilantro, jalapeño, and lime juice in a bowl. Mix well and set aside.
- Serve the curried beef and mushrooms hot, topped with a generous spoonful of mango salsa.
