  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 and 1/4 cups chocolate chips

If you don’t have buttermilk on hand, you can easily substitute it with a mixture of milk and vinegar. Just combine 1 tablespoon of vinegar with enough milk to make a cup and let it sit for a few minutes before using.

Instructions

Let’s get baking! Follow these steps to whip up a batch of these delightful treats:

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, whisk the melted butter, granulated sugar, and brown sugar until well combined.
  4. Add the eggs, one at a time, to the sugar mixture, beating well after each addition. Stir in the vanilla extract.
  5. Gently fold in the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Be careful not to overmix — it’s okay if there are a few lumps.
  6. Fold in the chocolate chips, reserving a handful to sprinkle on top of the muffins before baking.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the reserved chocolate chips on top.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remember, every oven is a little different, so keep an eye on them!
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
