Ingredients
Gathering the right ingredients is half the fun! Here’s what you’ll need to create these scrumptious muffins:
- 1 and 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 and 1/4 cups chocolate chips
If you don’t have buttermilk on hand, you can easily substitute it with a mixture of milk and vinegar. Just combine 1 tablespoon of vinegar with enough milk to make a cup and let it sit for a few minutes before using.
Instructions
Let’s get baking! Follow these steps to whip up a batch of these delightful treats:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, whisk the melted butter, granulated sugar, and brown sugar until well combined.
- Add the eggs, one at a time, to the sugar mixture, beating well after each addition. Stir in the vanilla extract.
- Gently fold in the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Be careful not to overmix — it’s okay if there are a few lumps.
- Fold in the chocolate chips, reserving a handful to sprinkle on top of the muffins before baking.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the reserved chocolate chips on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remember, every oven is a little different, so keep an eye on them!
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
