Ingredients
4 pieces of beef shanks (about 2 inches thick)
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cloves garlic, minced
1 cup dry white wine (or chicken broth as a substitute)
2 cups beef broth
1 can (14.5 ounces) diced tomatoes
2 tablespoons tomato paste
1 teaspoon dried thyme
1 bay leaf
1 tablespoon lemon zest
Chopped fresh parsley, for garnish
Instructions
Preheat your oven to 325°F (160°C). Season the beef shanks generously with salt and pepper.
Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef shanks on all sides until browned, about 4-5 minutes per side. Remove the shanks and set aside.
In the same pot, add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Stir in the garlic and cook for an additional minute.
Pour in the white wine, scraping up any brown bits from the bottom of the pot. Let it simmer for 2-3 minutes to reduce slightly.
Add the beef broth, diced tomatoes, tomato paste, thyme, and bay leaf. Stir to combine, then return the beef shanks to the pot, submerging them in the liquid.
Cover the pot and transfer it to the oven. Braise for 2 to 2 1/2 hours, or until the meat is tender and easily pulls away from the bone.
Once cooked, remove the bay leaf and discard. Stir in the lemon zest. Adjust seasoning with salt and pepper if needed.
