Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 8 ounces linguine pasta
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
For a twist, you can substitute chicken with shrimp or keep it vegetarian by adding more veggies like bell peppers or mushrooms. The choice is yours!
Instructions
- Start by cooking the linguine according to package instructions. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the chicken pieces to the skillet, season with smoked paprika, red pepper flakes, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.
- Stir in the lemon juice and half of the parsley, allowing the flavors to meld together for an additional 2 minutes.
- Add the cooked linguine to the skillet, tossing it to coat in the buttery sauce. Taste and adjust seasoning if necessary.
- Serve immediately, garnished with the remaining parsley and a sprinkle of grated Parmesan cheese if desired.
Remember, patience is key — just like when I helped my abuela with her tortillas, take your time and enjoy the process!
