Ingredients

  • 1 pound ground beef
  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded cheddar cheese for topping
  • Optional: Red pepper flakes for a spicy kick

If you’re out of ground beef, ground turkey or chicken works just as well. And if you like a bit more heat, adding a dash of red pepper flakes will do the trick. This is a recipe that welcomes creativity, much like the meals I grew up with, where every dish was a new adventure.

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent and the garlic is fragrant, about 3 minutes.
  2. Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon, for about 6-8 minutes.
  3. Stir in the chopped cabbage, paprika, cumin, salt, and pepper. Cook until the cabbage is tender, about 10 minutes, stirring occasionally.
  4. If desired, sprinkle cheddar cheese on top and cover the skillet until the cheese has melted, about 2 minutes.
  5. Taste and adjust seasoning if necessary. Serve hot, perhaps garnished with a sprinkle of fresh herbs if you have them on hand.

One tip from my years in the kitchen: don’t rush the browning of the beef. That caramelization adds a depth of flavor that makes the dish irresistible. It’s a little technique I picked up from watching my abuela cook with such care and attention.
