Ingredients

To make this dish, you’ll need a handful of ingredients, most of which you might already have in your pantry. Here’s what you’ll need:

  • 1 1/2 pounds pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 cups sliced mushrooms (I love using cremini, but white mushrooms work too)
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley for garnish (optional)

If you’re out of something, don’t worry! You can substitute dried thyme with rosemary or oregano, and if you’re vegetarian, swap the chicken broth for vegetable broth.

Instructions

Follow these steps, and you’ll have a delicious meal ready in no time:

  1. Preheat your oven to 400°F (200°C).
  2. Season the pork tenderloin with salt, pepper, garlic powder, and thyme. Rub the seasonings into the meat to ensure it’s well-coated.
  3. In a large, oven-safe skillet, heat olive oil over medium-high heat. Add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.
  4. Remove the pork from the skillet and set aside. In the same skillet, add the mushrooms and cook until they start to brown, about 5 minutes.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. This is where the magic happens — those bits are packed with flavor!
  6. Return the pork to the skillet, spooning some of the mushrooms and broth over the top. Place the skillet in the oven and roast for 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  7. Remove the skillet from the oven. Transfer the pork to a cutting board and let it rest for 5 minutes before slicing.
  8. Add butter to the skillet and stir until melted, creating a rich sauce to drizzle over the pork slices.
  9. Slice the pork, garnish with fresh parsley if using, and serve with the mushrooms and sauce. Enjoy!
