Ingredients

  • 1 pound ground beef (or substitute with ground turkey for a lighter option)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 box (8.5 oz) cornbread mix
  • 1/3 cup milk
  • 1 egg
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
  5. While the meat mixture simmers, prepare the cornbread according to the package instructions, using the milk and egg. Stir in half of the shredded cheese into the cornbread batter.
  6. Transfer the meat mixture to a greased 9×13-inch baking dish. Spread the cornbread batter evenly over the top.
  7. Bake in the preheated oven for 15 minutes. Remove the dish and sprinkle the remaining cheese over the top. Return to the oven and bake for an additional 10 minutes, or until the cornbread is golden and cooked through.
  8. Let the tamale pie cool for a few minutes before garnishing with fresh cilantro, if desired. Serve warm and enjoy!
