Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups chicken broth
  • 3 tablespoons sriracha sauce (adjust for spice preference)
  • 1 tablespoon sesame oil
  • 2 packs of ramen noodles
  • 1 cup coconut milk
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped (optional)
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Start by marinating the chicken breasts in olive oil, soy sauce, half of the minced garlic, and ginger. Let them sit for at least 20 minutes to absorb the flavors.
  2. In a large pot, heat the remaining olive oil over medium heat. Add the marinated chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the pot and set aside.
  3. In the same pot, add the chicken broth, sriracha, and sesame oil. Bring to a simmer, allowing the flavors to meld together.
  4. Add the ramen noodles, cooking them until they are tender, approximately 5 minutes.
  5. Reduce the heat to low. Stir in the coconut milk and the remaining minced garlic, allowing the sauce to thicken slightly. If desired, mix cornstarch with a little water and add to the pot for a thicker consistency.
  6. Slice the cooked chicken and return it to the pot to reheat gently in the sauce.
  7. Taste and adjust seasoning with salt and pepper according to your preference.
  8. Ladle the fiery ramen into bowls, garnishing with green onions, cilantro, and a squeeze of lime juice for a fresh finish.
