Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 2 cups water
  • 3 tablespoons soy sauce
  • 1 tablespoon chili paste (adjust to taste for desired heat)
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 4 ounces shiitake mushrooms, sliced
  • 2 bundles of ramen noodles
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 7-8 minutes per side until golden brown and cooked through. Remove from the pot and set aside to cool slightly.
  2. In the same pot, add the garlic and ginger, sautéing for about 1 minute until fragrant. This step always takes me back to my abuela’s kitchen, where the aroma of sautéing garlic was a daily occurrence.
  3. Add the chicken broth, water, soy sauce, and chili paste to the pot. Stir well to combine and bring to a simmer. Let it simmer for about 10 minutes to allow the flavors to meld together.
  4. Slice the cooked chicken into thin strips and return it to the pot along with the shiitake mushrooms. Simmer for an additional 5 minutes.
  5. Add the ramen noodles to the pot, cooking according to package instructions until they are tender but still have a slight bite.
  6. Stir in the sesame oil and adjust the seasoning with more soy sauce or chili paste, if needed.
  7. Serve the ramen hot, garnished with sliced green onions and a sprinkle of sesame seeds for that extra touch of flavor and texture.
