Ingredients
2 cups long-grain white rice
1 pound ground beef or turkey
1 medium onion, diced
1 bell pepper, diced (red or green)
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
2 cups chicken broth
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste

Optional: Fresh cilantro for garnish

Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until soft and fragrant, about 5 minutes.
Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
Increase the heat to medium-high and add the ground beef or turkey. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks.
Drain any excess fat from the skillet and return it to the heat. Stir in the rice, allowing it to toast slightly for about 2 minutes.
Add the cumin, paprika, salt, and pepper, stirring to combine.
Pour in the diced tomatoes (with juice) and chicken broth. Stir well to mix everything together.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
If using, add the frozen peas during the last 5 minutes of cooking, stirring them into the rice.
Remove from heat and let it sit, covered, for an additional 5 minutes before serving. Garnish with fresh cilantro if desired.
