Ingredients

  • 2 cups long-grain white rice
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 1 bell pepper, diced (red or green)
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas for added color and nutrition
  • Optional: Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until soft and fragrant, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.
  3. Increase the heat to medium-high and add the ground beef or turkey. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks.
  4. Drain any excess fat from the skillet and return it to the heat. Stir in the rice, allowing it to toast slightly for about 2 minutes.
  5. Add the cumin, paprika, salt, and pepper, stirring to combine.
  6. Pour in the diced tomatoes (with juice) and chicken broth. Stir well to mix everything together.
  7. Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  8. If using, add the frozen peas during the last 5 minutes of cooking, stirring them into the rice.
  9. Remove from heat and let it sit, covered, for an additional 5 minutes before serving. Garnish with fresh cilantro if desired.
