Ingredients

  • 1 1/2 pounds ground beef (substitute with ground turkey for a leaner option)
  • 1 cup breadcrumbs (panko or regular, your choice)
  • 1 cup caramelized onions (about 2 large onions, thinly sliced)
  • 2 cloves garlic, minced
  • 1/2 cup shredded Gruyère cheese (or substitute with Swiss or mozzarella)
  • 1/4 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large skillet, caramelize the onions over medium heat until golden brown, about 15-20 minutes, stirring occasionally. Add garlic and cook for another 1-2 minutes. Set aside to cool slightly.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, caramelized onions, garlic, Gruyère cheese, beef broth, Worcestershire sauce, Dijon mustard, dried thyme, salt, and pepper.
  4. In a small bowl, beat the eggs and then add them to the meat mixture. Use your hands (my favorite method) to mix everything until just combined. Avoid over-mixing to keep the meatloaf tender.
  5. Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
  6. Bake for 45-55 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for at least 10 minutes before slicing. This lets the juices redistribute, making each slice juicy and flavorful.
