6 large yellow onions, thinly sliced

1/2 cup dry white wine
2 tablespoons brandy (optional)
1 bouquet garni (a bundle of thyme, bay leaf, and parsley)

Instructions
In a large, heavy-bottomed pot, melt the butter with olive oil over medium heat. Add sliced onions, salt, and sugar. Stir well to coat the onions.
Reduce the heat to medium-low, and cook the onions, stirring occasionally, until they are deeply caramelized. This should take about 45 minutes. Patience is key here — let the onions do their magic.
Sprinkle the flour over the onions and cook for another 2 minutes, stirring constantly. This step helps thicken the soup slightly.
Pour in the beef broth and white wine, scraping up any brown bits from the bottom of the pot. Add the brandy and bouquet garni. Bring to a simmer and let it cook for another 30 minutes.
While the soup simmers, preheat your oven to 400°F. Lay the baguette slices on a baking sheet and toast them for about 10 minutes or until golden.
Remove the bouquet garni from the soup and season with salt and pepper to taste.
