- 1/3 cup pine nuts (or walnuts for a more budget-friendly option)
- 2 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Juice of half a lemon (optional, for a touch of brightness)
Instructions
- Start by toasting the pine nuts in a dry skillet over medium heat for about 3-5 minutes, or until they’re golden brown and fragrant. This step adds depth to your pesto.
- In a food processor, combine the basil leaves, toasted nuts, and minced garlic. Pulse until the ingredients are finely chopped.
- With the processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. I love this part because you can really see the transformation!
- Add in the Parmesan cheese, salt, pepper, and lemon juice if using. Pulse a few more times until everything is well incorporated.
