8 slices of brioche or white bread
1 cup fresh strawberries, hulled and chopped
1/4 cup granulated sugar
8 oz cream cheese, softened
1 teaspoon vanilla extract
2 tablespoons powdered sugar
2 large eggs
1/2 cup milk
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup breadcrumbs
Vegetable oil for frying

Instructions
In a small saucepan, combine the chopped strawberries and granulated sugar. Cook over medium heat until the strawberries are soft and the sugar is dissolved, about 5 minutes. Set aside to cool.
In a bowl, mix the softened cream cheese, cooled strawberry mixture, vanilla extract, and powdered sugar until smooth and well combined.
Spread a generous layer of the strawberry cheesecake mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
