Ingredients

  • 8 slices of brioche or white bread
  • 1 cup fresh strawberries, hulled and chopped

  • 8 oz cream cheese, softened

  • 2 tablespoons powdered sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Optional: powdered sugar for dusting

Instructions

  1. In a small saucepan, combine the chopped strawberries and granulated sugar. Cook over medium heat until the strawberries are soft and the sugar is dissolved, about 5 minutes. Set aside to cool.
  2. In a bowl, mix the softened cream cheese, cooled strawberry mixture, vanilla extract, and powdered sugar until smooth and well combined.
  3. Spread a generous layer of the strawberry cheesecake mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
  4. In a shallow dish, whisk together the eggs, milk, and ground cinnamon. This mixture reminds me of the French toast my mom used to make on Sunday mornings.
