Total Time:45 minutes
Yield:4 servings
Ingredients
1 pound ground beef
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup uncooked white rice
2 cups beef broth
1 cup grated Cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the ground beef to the skillet, seasoning with salt and pepper. Cook until browned and cooked through, breaking it apart with a spatula, about 7-8 minutes.
Stir in the uncooked rice, ensuring it is well mixed with the beef and garlic.
Pour in the beef broth, stirring to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
While the rice cooks, prepare the Cheddar Parmesan sauce. In a small saucepan, heat the heavy cream over low heat. Gradually add the Cheddar and Parmesan cheeses, whisking until melted and smooth.
Once the rice is cooked, pour the cheese sauce over the beef and rice mixture. Stir gently to combine. Taste and adjust seasoning if necessary.
