Ingredients

  • 1 cup uncooked elbow macaroni
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 ½ cups milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 12 large shrimp, peeled and deveined
  • 3 tablespoons garlic butter
  • 2 cups waffle mix
  • 1 egg
  • 1 cup water
  • Non-stick cooking spray
  • Optional: chopped parsley for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.
  2. In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1 minute.
  3. Slowly whisk in the milk, continuing to stir until the mixture thickens, about 3-5 minutes.
  4. Add the cheddar cheese, stirring until melted and smooth. Season with salt and pepper, then fold in the cooked macaroni. Remove from heat.
  5. In a skillet, melt the garlic butter over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Set aside.
  6. Preheat your waffle iron and spray with non-stick cooking spray.
  7. In a bowl, combine the waffle mix, egg, and water, stirring until smooth.
  8. Pour half of the waffle batter into the preheated waffle iron. Layer with half of the mac and cheese and shrimp, then top with the remaining waffle batter. Cook until golden brown and crispy, about 4-5 minutes.
  9. Repeat for the second waffle. Once cooked, slice into quarters and garnish with chopped parsley if desired.
