- 1 pound large shrimp, peeled and deveined
- 12 ounces linguine or your pasta of choice
- 1/4 cup unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1/4 cup white wine or chicken broth
- 1 lemon, juiced and zested
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
If you’re out of linguine, any long pasta will do. And if you don’t have white wine on hand, chicken broth is a wonderful substitute that keeps the dish flavorful.
Instructions
Cooking is an art, and like any art form, it thrives on a mix of structure and creativity. Here’s how to bring this dish to life:
- Begin by cooking the pasta in a large pot of salted boiling water until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, if using, and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
- Pour the white wine or chicken broth into the skillet, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes to reduce slightly.
- Return the shrimp to the skillet, along with the cooked pasta, lemon juice, and zest. Toss everything together, adding reserved pasta water as needed to create a silky sauce.
- Season with salt and pepper to taste, and sprinkle with fresh parsley. Serve hot, with grated Parmesan cheese on top.
This recipe is wonderfully forgiving, so don’t stress if you need to adjust cooking times or ingredients based on what’s in your pantry.
