Ingredients

  • 8 ounces of spaghetti or your choice of pasta
  • 1 pound of large shrimp, peeled and deveined
  • 3 tablespoons of unsalted butter
  • 4 cloves of garlic, minced
  • 1/4 cup of chicken broth or white wine
  • 1/4 teaspoon of crushed red pepper flakes (optional for a bit of heat)
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice
  • 1/4 cup of freshly grated Parmesan cheese
  • 2 tablespoons of chopped fresh parsley

Instructions

  1. Start by bringing a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the garlic and sauté until fragrant, about 1-2 minutes, being careful not to let it burn.
  3. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of butter. Pour in the chicken broth or white wine, stirring to deglaze the pan and scrape up any browned bits, which are full of flavor.
  5. Return the shrimp to the skillet along with the cooked pasta. Add the reserved pasta water and lemon juice, tossing everything together to coat evenly.
  6. Sprinkle the Parmesan cheese over the pasta and toss again. Taste and adjust the seasoning if necessary.
  7. Garnish with fresh parsley before serving to add a pop of color and freshness.
