Ingredients
12 lasagna noodles
2 tablespoons olive oil
1 pound shrimp, peeled and deveined
4 cloves garlic, minced
1/4 cup unsalted butter
1/4 cup white wine (optional, or substitute with chicken broth)
1 teaspoon red pepper flakes
1 cup ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
Salt and pepper to taste
1 lemon, juiced and zested
Instructions
Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the lasagna noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the shrimp and cook until pink and opaque, around 3-4 minutes. Remove the shrimp and set aside.
In the same skillet, melt the butter over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
Pour in the white wine or chicken broth, and add the red pepper flakes. Cook for another 2 minutes until the liquid is slightly reduced.
Return the shrimp to the skillet, add lemon juice and zest, and toss everything to combine. Remove from heat and stir in the chopped parsley. Season with salt and pepper to taste.
To assemble the lasagna, spread a thin layer of ricotta cheese on the bottom of a 9×13-inch baking dish. Place a layer of noodles on top, followed by a layer of the shrimp mixture, mozzarella, and Parmesan cheese.
Repeat the layers until all ingredients are used, finishing with a generous layer of mozzarella and Parmesan on top.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
