Ingredients
- 2 boneless ribeye steaks, about 1 inch thick
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Lemon wedges, for serving (optional)
Feel free to substitute the herbs with your favorites or what you have on hand. Cilantro and oregano can add a unique twist if you want to experiment!
Instructions
- Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking.
- Season both sides of the steak generously with salt and freshly ground black pepper.
- Heat a cast-iron skillet over high heat and add the olive oil. Once the oil is shimmering, add the steaks to the pan.
- Sear the steaks for about 3-4 minutes on each side, or until a beautiful crust forms. Remember, patience is key here — don’t move the steaks around!
- Reduce the heat to medium and add the butter, garlic, rosemary, thyme, and parsley to the pan.
- Baste the steaks with the melted herb butter using a spoon, tilting the pan slightly to collect the butter. This step is what infuses the steak with that wonderful garlic herb flavor.
- Continue cooking to your desired doneness. For medium-rare, aim for an internal temperature of 135°F.
- Remove the steaks from the pan and let them rest for 5 minutes before slicing. This resting period allows the juices to redistribute, making each bite juicy and flavorful.
