Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1.5 pounds Yukon Gold potatoes, peeled and quartered
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 pound carrots, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon butter
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). While the oven is warming, in a small bowl, combine minced garlic, olive oil, thyme, rosemary, salt, and pepper.
  2. Rub the garlic-herb mixture evenly over the chicken breasts. Let them marinate for about 15 minutes — enough time to let those flavors meld beautifully.
  3. On a baking sheet, arrange the chicken breasts and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  4. Meanwhile, in a large pot, bring salted water to a boil. Add the Yukon Gold potatoes and cook for about 15-20 minutes until tender.
  5. Drain the potatoes, then return them to the pot. Add butter and milk, mashing until smooth and creamy. Season with salt and pepper to taste.
  6. For the carrots, in a skillet over medium heat, melt the butter. Add the carrots and sauté for about 5 minutes.
  7. Stir in honey and continue cooking for another 5-7 minutes until the carrots are tender and nicely glazed.
  8. To serve, plate the chicken with a generous scoop of mashed potatoes and a side of glazed carrots. Sprinkle fresh parsley for a pop of color.
