Ingredients

  • 1 pound ground chicken
  • 1/2 cup grated parmesan cheese
  • 1/3 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Feel free to substitute the ground chicken with turkey or beef, depending on what you have on hand. For a gluten-free version, use gluten-free breadcrumbs.

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, parmesan cheese, breadcrumbs, minced garlic, and beaten egg.
  3. Add the milk, Italian seasoning, salt, and black pepper to the mixture. Mix until all ingredients are well incorporated. Don’t overmix, as you want the meatloaves to remain tender.
  4. Divide the mixture into four equal portions and shape them into mini loaves. Place them on the prepared baking sheet.
  5. Drizzle the olive oil over each meatloaf to keep them moist and enhance the flavor. My abuela always taught me the importance of adding a touch of oil for that perfect crust!
  6. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and they are golden brown.
