Ingredients
- 1 pound ground chicken
- 1/2 cup grated parmesan cheese
- 1/3 cup breadcrumbs
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/4 cup milk
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley (optional, for garnish)
Feel free to substitute the ground chicken with turkey or beef, depending on what you have on hand. For a gluten-free version, use gluten-free breadcrumbs.
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, parmesan cheese, breadcrumbs, minced garlic, and beaten egg.
- Add the milk, Italian seasoning, salt, and black pepper to the mixture. Mix until all ingredients are well incorporated. Don’t overmix, as you want the meatloaves to remain tender.
- Divide the mixture into four equal portions and shape them into mini loaves. Place them on the prepared baking sheet.
- Drizzle the olive oil over each meatloaf to keep them moist and enhance the flavor. My abuela always taught me the importance of adding a touch of oil for that perfect crust!
- Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and they are golden brown.
- Once done, let them rest for a few minutes before serving. Sprinkle with fresh parsley if desired.
