Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional for a bit of heat)
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley, for garnish
- Lemon wedges, for serving
Feel free to substitute the smoked paprika with regular paprika if you prefer a milder flavor. The red pepper flakes add a nice kick, but they’re completely optional.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the olive oil, minced garlic, smoked paprika, red pepper flakes, salt, and black pepper. Add the shrimp and toss to coat evenly, embracing the flavors as you mix.
- Spread the shrimp in a single layer on the prepared baking sheet. Sprinkle the grated Parmesan cheese over the shrimp, ensuring each piece gets a generous coating.
- Roast in the preheated oven for 8-10 minutes, or until the shrimp turn pink and opaque. Keep an eye on them; they cook quickly and you don’t want to overcook them, which can make them rubbery.
- Once cooked, remove from the oven and transfer to a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side. The lemon juice adds a fresh, zesty finish to the dish.
